There is no normal sock in Socknitters! However, I like a 3 or 4 inch cuff and then I usually knit the leg for another 1-4 inches until I'm sick of it or until think I might run out of yarn if I knit too much more. I try it on constantly and when it looks and feels 'right' on my leg, I start the heel. I really don't worry too much about running out of yarn either. I know that by knitting both socks at the same time...if I start to run low on yarn...I can always punt on the foot with stripes from another yarn or contrasting toes. So I may start the sock with a plan, but I never know for sure how it will end up looking!
